Collaboration with the science museum of minnesota with the goal to make the giant beaver the official state fossil of minnesota.

Our latest Black IPA is bursting with flavors and aromas of resinous pine, grapefruit, and woody hops. Backed with subtle roasted coffee and chocolate notes. Light bodied with a moderate hop bitterness that finishes dry. Pours a clear jet black with a dark tan head

Giant Beaver

During the Ice Age, Minnesota was home to the Giant Beaver, the largest rodent ever known from North America, the size of a black bear. It lived alongside mammoths, scimitar-toothed cats and even the first humans to settle into Minnesota. 

A State Fossil for Minnesota

Minnesota is just one of four U.S. states that does not have a fossil as a state symbol. The Science Museum of Minnesota set out to change that and in late 2021 held an online vote for what it should be. The very clear winner was the Giant Beaver, Castoroides. Known in Dakota as Ċapa and Ojibwe as Amik, this ancient relative of the modern beaver is an excellent choice. The museum has brought it to the legislature 3 times now, but no luck yet. The 9th installment of the Due Date Series celebrates Nikki & Sabastian’s daughter, Aurelia.

Aged 12 months in bourbon barrels, expect a full body and richly complex brew. Aromas of roasted coffee, chocolate, and vanilla as well as notes of oak and bourbon are balanced with subtle hints of maple syrup and dates. Ari’s cup of Joe is the perfect brunch companion or evening sipper.

This Old Ale was aged for 3 years in Tawny Port barrels inoculated with 2 strains of brettanomyces yeast. Notes of cherries, funky brett earthiness, bread crust, sherry, caramel, and a pleasant vinous acidity. To quote the famous beer writer Michael Jackson "it is best to be drunk in half pints by a warm fire on a cold winter's night".


Bamberger Bock

Collaboration Bock w/ Indeed Brewing Company

We’ve teamed up with our friends from Indeed Brewing Company and brewed up a Franconian Style Bock. Brewed with pilsner and vienna malts from Bamberg Germany, this double-decocted lager has robust toasty and bready malt notes along with a subtle floral hop aroma. Lagered for months for an easy drinking spring-like Bock. Medium/Light bodied with a low bitterness and a semi-dry finish. Pours a clear amber color with an off white head.

Pulled together by tidal forces, chocolate rye and roast malt collide to form Galactic Tide Rye Porter. English hops and malt are swirled and disrupted by the gravity of our porter, pulling them into the blackness of the ale, right through the creamy tan head. Introducing our newest year round Hazy IPA. Brewed with 2 publicly available US hop varieties Vista and Cashmere. Hop flavors and aromas of stone fruit, lime, melon, papaya, and an herbal note. Medium bodied with a low bitterness and a soft finish thanks to the flaked oats. Pours a hazy straw color with a fluffy white head.

Funky Brett ipa

While Brettanomyces yeast is generally known for its "funky" character it can also create some really lovely tropical notes as well. We used a combo yeast for this beer. Saccharomyces to do the bulk of the fermentation then the Brett does its thing after. We added a big dry hop charge of HRC-003 hops along with Sultana and Loral Cryo hops to really bring out the tropical character. Loads of pineapple funk with Mango and Citrus notes. Medium bitterness with a dry finish.

German/American Hybrid Lager

Italian pilsner

Popularized by Birrificio Italiano’s Tipopils in Italy, this lager style has gained some momentum in the US. At heart, ours is a German Style Pils but with a twist. It's dry hopped twice during lagering. No, not a 5lb per barrel hop bomb. 2, small dry hop additions for delicate hop flavors and aromas. Honey/cracker malt flavors with a soft/spicy bitterness. Semi-sweet malt and floral, lemon, mint, spicy, herbal hop aromas. Light/medium bodied that finishes dry. Pours a clear pale gold with a white head.

There’s a lot of interpretations of Mexican style lager. One key element should be drinkability. A session lager of sorts. Generally brewed with corn. Flaked corn is more popular but we chose to use corn grits which need to be cooked separately before being added to the mash. While cooking grits is much more labor intensive, we feel it gives a little bit more of that corn flavor. Flavors and aromas of corn, cereal, bread crust, and floral hops. Light bodied with a crisp/dry finish. Pours a brilliantly clear pale straw with a light white head
